This pesto will elevate your pasta, pizza, sandwiches, and beyond!
Ingredients:
πΏ 2 cups packed fresh basil
π₯ 3 tbsp pine nuts
π§ 3 large garlic cloves
π 2 tbsp lemon juice
π§ 3 tbsp nutritional yeast
π§ ΒΌ tsp sea salt
π’οΈ 2 tbsp extra virgin olive oil
π¦ 1 tbsp water
To a food processor or blender, add the basil, pine nuts, garlic, lemon juice, nutritional yeast, and sea salt and blend/mix on high while adding the olive oil a little at a time (streaming in while the machine is on if possible) and scrape down sides as needed. Then add 1 tbsp water until the desired consistency is reached β a thick but pourable sauce. It will keep in a sealed container for two weeks in the refrigerator or freeze to keep it fresh for up to one month.
