These simple pancakes are meant to be ejoyed with a big portion of antioxidant-rich berries!

Step 1:

To a medium bowl, add the flour, baking powder, maple syrup, vanilla, apple sauce, plant milk, and cinnamon (optional), and mix with a fork. Add oil to a pan and pour ΒΌ cup of the batter onto the pan. Cook for 1-3 minutes on each side and flip when bubbles appear in the middle, and the edges turn slightly dry. This batter should make 6-7 pancakes. Add fresh or frozen berries to the batter, or top fresh berries on the pancakes with maple syrup. This batter can also be used in a waffle maker to make waffles.
