Your morning bagel meets colorful vegetables.
Ingredients:
π₯― 2 bagels
π₯ Β½ cup vegan cream cheese
π ΒΌ cup sundried tomatoes in olive oil
π₯ 1 avocado
π₯ Β½ large cucumber
π 1 medium tomato
π± β cup sprouts
π§ 1-2 tbsp everything bagel seasoning
In a small food processor, add the vegan cream cheese and sundried tomatoes. Pulse until it's loosely mixed.
Cut the bagel in half, and use your fingers to remove the desired amount of bread in between the crust, then toast both halves of the bagel.

Thinly slice the avocado, cucumber, and tomato, then add a nice portion of the sundried vegan cream cheese in the scooped portion of the bagel and layer the thinly sliced avocado, cucumbers, tomato, sprouts, and sprinkle everything bagel seasoning.
