Press the oat mixture firmly and evenly into the pan, and resist the urge to stir while it bakes — an undisturbed, tightly packed layer is what bakes into actual clusters instead of loose granola. Let it cool completely on the pan before breaking it up, or the clusters will fall apart.
Instructions:
- Preheat & Prep: Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- Combine the Dry Ingredients: Combine the oats, nuts, and seeds in a large bowl.
- Make the Wet Mixture & Combine: Whisk together the maple syrup, oil, brown sugar, vanilla, cinnamon, and salt, then pour over the oat mixture and stir to combine, pressing firmly so clusters form.
- Press into the Pan: Spread the mixture onto the baking sheet, pressing down firmly into an even layer.
- Bake: Bake for 30-35 minutes, without stirring, until golden.
- Cool & Break: Let cool completely on the pan before breaking into chunky clusters.
- Add Dried Fruit: Stir in dried fruit, if using.
Notes: Read through the full recipe before starting so you have all ingredients prepped and ready to go.
Tips: Taste as you go and adjust seasoning to your preference before serving.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
Swaps: Feel free to swap in seasonal vegetables or pantry staples you have on hand, adjusting cook time as needed.
A few ingredients do most of the work in this recipe. The rolled oats adds hearty texture and a subtle nuttiness. The maple syrup brings natural sweetness with a hint of caramel depth. The neutral oil keeps the fat neutral so the other ingredients can shine. The brown sugar adds moisture and a warm, caramel-like sweetness.
