    • 1 cup bean sprouts, plus more for garnish

    • 45 ml (3 tbsp) soy sauce or tamari
    • 32 g (2 tbsp) tamarind paste
    • 26.6 g (2 tbsp) brown sugar
    • 15 ml (1 tbsp) lime juice

    Instructions:

    1. Soak the Noodles: Soak the rice noodles in warm water according to package instructions until pliable, then drain.
    2. Make the Sauce: Whisk together the soy sauce, tamarind paste, brown sugar, and lime juice to make the sauce.
    3. Sear the Tofu: Heat 1 tablespoon oil in a wok or large skillet over medium-high heat and pan-fry the tofu until golden on all sides. Remove and set aside.
    4. Sauté the Garlic: Add the remaining oil to the wok and sauté the garlic for 30 seconds.
    5. Add Noodles & Sauce: Add the drained noodles and sauce, tossing to coat evenly.
    6. Add the Rest: Stir in the bean sprouts, green onions, and fried tofu, cooking for 1-2 minutes until heated through.
    7. Plate & Top: Divide among plates and top with crushed peanuts, extra bean sprouts, and cilantro.
    8. Serve: Serve with lime wedges.
