    Instructions:

    1. Preheat and prep the crust. Preheat the oven to 425°F (220°C). Fit the pie crust into a 9-inch pie dish, crimp the edges, and chill for 15 minutes.
    2. Blind bake. Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 10 minutes, remove the weights and parchment, then bake for 5 more minutes. Let cool slightly.
    3. Make the filling. Whisk together the pumpkin puree, coconut milk, brown sugar, cornstarch, pumpkin pie spice, salt, and vanilla until completely smooth.
    4. Fill and bake. Reduce the oven to 350°F (175°C). Pour the filling into the crust and bake for 45-50 minutes, until the center is just set with a slight jiggle.
    5. Cool and chill. Let cool to room temperature, then refrigerate for at least 3 hours before slicing.
