Vegan Apple Cider
Ingredients:
- 960 ml (4 cups) fresh apple juice
- 4 g (2) cinnamon sticks
- 4 whole cloves
- 2 g (2) star anise
- 3 slices fresh ginger
- 1 orange, sliced into rounds
- 15 ml (1 tbsp) maple syrup
- Apple slices and cinnamon sticks for garnish

Instructions:
- Combine — Add apple juice, cinnamon sticks, cloves, star anise, ginger, and orange slices to a saucepan over medium heat.
- Simmer — Bring to a gentle simmer (do not boil). Reduce heat to low and simmer uncovered for 20–30 minutes to let the spices infuse.
- Taste & sweeten — Taste and add maple syrup if a sweeter cider is desired.
- Strain — Pour through a fine mesh strainer into mugs, discarding the solids.
- Garnish & serve — Garnish with a fresh apple slice and cinnamon stick. Serve warm.
Slow Cooker Method
Combine all ingredients in a slow cooker and cook on LOW for 2–3 hours or HIGH for 1 hour. Strain and serve.
Tips: Use fresh-pressed apple cider from a farmers market for the best flavor. Add a splash of cranberry juice for a festive twist. This also works beautifully chilled over ice as a cold spiced cider.
Swaps: Orange can be swapped for lemon or blood orange. Fresh ginger can be swapped for ¼ tsp ground ginger.
Storage: Refrigerate strained cider for up to 5 days. Reheat on the stovetop or microwave when ready to serve.
