    Instructions:

    1. Sauté the Vegetables: Heat the olive oil in a large paella pan or wide skillet over medium heat and sauté the onion and bell pepper for 5-6 minutes.
    2. Add Garlic: Add the garlic and cook for 1 minute, until fragrant.
    3. Bloom the Spices: Stir in the diced tomatoes, smoked paprika, and saffron, cooking for 2-3 minutes.
    4. Toast the Rice: Add the rice and stir to coat evenly in the tomato mixture.
    5. Simmer: Pour in the warm vegetable broth and bring to a simmer. Add the green beans, artichokes, and chickpeas.
    6. Cook Undisturbed: Reduce heat to low and cook, undisturbed, for 20-25 minutes, until the rice is tender and the liquid is absorbed.
    7. Rest: Let the paella rest for 5 minutes before serving.
    8. Garnish & Serve: Garnish with parsley and serve with lemon wedges.
