Marinate for at least the full 20 minutes, or longer if you have time — this is a quick marinade, but adobo's flavor only deepens the longer the tofu or seitan sits in it.

    Instructions:

    1. Marinate: Combine the tofu or seitan, soy sauce, vinegar, garlic, bay leaves, and peppercorns in a bowl and marinate for at least 20 minutes.
    2. Cook the Marinade: Heat the oil in a pot over medium heat and add the marinated mixture along with the marinade.
    3. Add Sugar & Broth: Stir in the brown sugar and vegetable broth.
    4. Simmer: Bring to a simmer and cook, uncovered, for 25-30 minutes, until the sauce has reduced and thickened.
    5. Serve: Remove the bay leaves and serve over rice.
Common Mistakes, Notes, Storage, Swaps & Tips

Notes: Press the tofu firmly before using — excess moisture keeps it from browning or absorbing marinade properly.

Tips: Taste as you go and adjust seasoning to your preference before serving.

Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days.

Swaps: Extra-firm tofu can be swapped for firm tofu (press longer) or tempeh for a firmer, nuttier bite.

    Why these Ingredients

This recipe leans on a handful of key ingredients to get its flavor and texture right. The extra-firm tofu or seitan provides protein and soaks up the surrounding flavors. The soy sauce adds savory, umami depth. The rice vinegar or apple cider vinegar adds tang that cuts through richness and balances the flavors. The garlic builds a savory, aromatic base.
