Ingredients:
- 6 cups peeled, sliced apples (about 6-7 medium apples)
- 2/3 cup sugar
- 2 tbsp all-purpose flour
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp lemon juice
- 2 vegan pie crusts (top and bottom), store-bought or homemade
- 2 tbsp vegan butter, cut into small pieces
- 1 tbsp plant milk, for brushing

Let the tossed apple mixture sit for a few minutes, then drain off any liquid that collects at the bottom of the bowl before filling the crust — apples release quite a bit of juice, and pouring it all in makes for a soggier pie.
Instructions:
- Preheat: Preheat the oven to 425°F (220°C).
- Toss the Apples: In a large bowl, toss the sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated.
- Fit the Bottom Crust: Fit one pie crust into a 9-inch pie dish.
- Fill: Pour the apple mixture into the crust and dot with vegan butter pieces.
- Top & Seal: Top with the second crust, sealing and crimping the edges. Cut a few slits in the top for steam to escape.
- Brush: Brush the top crust with plant milk.
- Bake: Bake for 20 minutes, then reduce the oven temperature to 375°F (190°C) and bake for another 30-35 minutes, until the crust is golden and the filling is bubbling.
- Cool: Let cool for at least 2 hours before slicing to allow the filling to set.
