Beet Juice

2 medium beets, peeled and chopped
1 apple, cored and sliced
1 inch fresh ginger, peeled
1/2 lemon, juiced
1/2 cup water (optional, to thin)

Instructions:
1. Wash and prep all produce — peel beets, core the apple, and peel the ginger.
2. Feed beets, apple, and ginger through a juicer.
3. Stir in fresh lemon juice.
4. Add water if you prefer a thinner consistency.
5. Pour over ice and serve immediately.
No juicer? Blend everything with 1 cup of water and strain through a fine mesh strainer or cheesecloth.
Sweeter juice: Add an extra apple or a few carrots.
Storage: Best consumed fresh. Can be stored in an airtight jar in the fridge for up to 24 hours. Shake before serving.
Tips: Wear gloves when handling beets to avoid staining your hands.
