    Chop all the vegetables before you start cooking so you can add them to the pot in sequence without stopping. Rinse the kale or spinach well and roughly chop it, ready to stir in near the end.

    Instructions:

    2. Add the Garlic: Add the garlic and cook for 30 seconds, until fragrant.
    3. Add the Vegetables & Broth: Stir in the diced tomatoes, broth, potatoes (or white beans), green beans, zucchini, corn, thyme, oregano, bay leaf, salt, and pepper.
    4. Simmer: Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, until the vegetables are tender.
    5. Add the Greens: Stir in the kale or spinach during the last 3-4 minutes of cooking, until wilted.
    6. Season & Adjust: Remove the bay leaf and taste, adjusting salt and pepper as needed.
