- 25 g (1 cup) fresh cilantro, packed 1 garlic clove
- 30 ml (2 tbsp) fresh lime juice (approximately 1 lime)
- 60 g (¼ cup) vegan mayo or plain unsweetened dairy-free yogurt
- 15–30 ml (1–2 tbsp) olive oil
- 15–30 ml (1–2 tbsp) water, to thin
- 1 g (¼ tsp) salt 1g (¼ tsp) black pepper
- ½ small jalapeño, seeds removed (optional, for heat)

Instructions:
- Blend the Dressing
Add 25 g (1 cup) fresh cilantro, 1 garlic clove, 30 ml (2 tbsp) fresh lime juice, 60 g (¼ cup) vegan mayo or dairy-free yogurt, 15–30 ml (1–2 tbsp) olive oil, 1 g (¼ tsp) salt, and 1 g (¼ tsp) black pepper to a blender. If using, add ½ jalapeño (seeds removed). Blend on high until completely smooth and creamy. - Adjust the Consistency
With the blender running, add 15–30 ml (1–2 tbsp) water one tablespoon at a time until the dressing reaches your desired consistency. - Taste and Adjust
Taste and adjust salt, lime juice, or garlic as needed. - Serve or Store
Use immediately or transfer to a sealed jar and refrigerate. The flavors deepen after 30 minutes in the refrigerator.

Notes:
Fresh cilantro (not dried) is essential here — dried cilantro has none of the bright flavor that makes this dressing distinctive.
Taste the dressing before adding salt — lime juice, garlic, and any added cumin provide a lot of seasoning already.
Tips:
Add a small slice of jalapeño for a spicy version, or a ripe avocado for a creamier texture.
Storage:
Keep refrigerated in a sealed jar for up to 4 days. Shake or stir well before using as the dressing separates naturally.
Swaps:
Lime can be swapped for lemon. Cilantro can be partially replaced with flat-leaf parsley for those who find cilantro too pungent.
