Ingredients:

  • 25 g (1 cup) fresh cilantro, packed 1 garlic clove
  • 30 ml (2 tbsp) fresh lime juice (approximately 1 lime)
  • 60 g (¼ cup) vegan mayo or plain unsweetened dairy-free yogurt
  • 15–30 ml (1–2 tbsp) olive oil
  • 15–30 ml (1–2 tbsp) water, to thin
  • 1 g (¼ tsp) salt 1g (¼ tsp) black pepper
  • ½ small jalapeño, seeds removed (optional, for heat)

Instructions:

1. Blend the Dressing - Add the cilantro, garlic, lime juice, vegan mayo or dairy-free yogurt, olive oil, salt, and black pepper to a blender or food processor. If using jalapeño, add it now. Blend on high until completely smooth and creamy.

2. Adjust the Consistency - With the blender running, add water one tablespoon at a time until the dressing reaches your desired consistency. For a thicker dip-style dressing use less water. For a pourable dressing add both tablespoons.

3. Taste and Adjust - Taste and adjust salt, lime juice, or garlic as needed. Add more cilantro for a stronger herb flavor or more jalapeño for extra heat.

4. Serve or Store - Use immediately or transfer to a sealed jar and refrigerate until ready to use. The flavors deepen after 30 minutes in the refrigerator.
