Chill the mixture for at least 30 minutes before rolling — cold dough is far easier to shape and holds together much better than rolling it while soft and sticky.

    Instructions:

    1. Mix: Combine all ingredients in a large bowl and stir until thoroughly mixed. The mixture should be sticky and hold together when pressed. If it’s too dry, add a little more maple syrup or peanut butter. If too wet, add more oats.
    2. Chill: Cover the bowl and refrigerate for at least 30 minutes. Cold mixture is much easier to roll and holds its shape better.
    3. Roll: Using a tablespoon or small cookie scoop, portion the mixture and roll into 1-inch balls between your palms. Place on a parchment-lined baking sheet or plate.
    4. Set: Return to the fridge for 15 minutes to firm up before serving.
Common Mistakes, Notes, Storage, Swaps & Tips

Tips: Chilling the mixture before rolling is key — don’t skip it. Wet hands or a light coating of coconut oil on your palms makes rolling much less sticky.

Swaps: Use almond butter, sunflower seed butter, or tahini instead of peanut butter. Swap chocolate chips for dried cranberries, raisins, or chopped dates. Add a scoop of protein powder or 2 tbsp cacao powder for a boost.

Flavor Variations: Try adding 1 tsp cinnamon and dried apples for an apple pie version, or swap coconut for hemp seeds and add a pinch of cayenne for a spicy kick.

Storage: Refrigerate in an airtight container up to 1 week. Freeze up to 3 months — thaw in the fridge overnight or eat straight from frozen as a firmer, cold treat.

    Why these Ingredients

A few ingredients do most of the work in this recipe. The old-fashioned rolled oats adds hearty texture and a subtle nuttiness. The natural peanut butter adds richness and a deep, nutty backbone. The maple syrup brings natural sweetness with a hint of caramel depth. The mini chocolate chips adds rich, deep chocolate flavor.
