Cook the peppers and onion over high heat without stirring too often — a hot pan and a little patience is what gives fajita vegetables their light char instead of steaming them soft.
Instructions:
- Season the Tofu: In a bowl, toss the tofu strips (or mushrooms) with lime juice, chili powder, cumin, smoked paprika, garlic powder, and salt.
- Sear the Tofu: Heat 1 tablespoon oil in a large skillet over medium-high heat and cook the tofu strips for 4-5 minutes per side, until golden and slightly crisp. Remove and set aside.
- Sauté the Vegetables: Add the remaining oil to the skillet and sauté the bell peppers and onion for 6-8 minutes, until softened and lightly charred.
- Combine: Return the tofu to the skillet and toss with the vegetables to combine.
- Warm the Tortillas: Warm the tortillas in a dry pan or microwave.
- Serve: Serve the fajita filling with warm tortillas, guacamole, salsa, and fresh cilantro.
Notes: Press the tofu firmly before using — excess moisture keeps it from browning or absorbing marinade properly.
Tips: Taste as you go and adjust seasoning to your preference before serving.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
Swaps: Extra-firm tofu can be swapped for firm tofu (press longer) or tempeh for a firmer, nuttier bite.
This recipe leans on a handful of key ingredients to get its flavor and texture right. The extra-firm tofu provides protein and soaks up the surrounding flavors. The red bell pepper adds sweetness and a pop of color. The green bell pepper adds sweetness and a pop of color. The yellow onion adds sweetness and depth as it cooks down.
