    • 1 tsp sriracha (adjust to taste)
    • 5 ml (1 tsp) maple syrup
    • 1 head butter lettuce or iceberg lettuce, leaves separated and washed
    • 2 tbsp toasted sesame seeds
    • Extra spring onion greens, sliced
    • Extra sriracha or chili oil, to taste
    • Lime wedges

    4. Add the aromatics and vegetables: Push the tofu to the sides of the pan. Add the garlic, ginger, and spring onion whites to the centre and cook for 30–60 seconds until fragrant. Add the bell pepper and water chestnuts and stir everything together. Cook for 2–3 minutes until the pepper softens slightly but still has a little crunch.
    5. Add the sauce: Pour the sauce over the filling and toss to coat everything evenly. Cook for 1–2 minutes, stirring frequently, until the sauce reduces and glazes the filling. The mixture should look glossy and saucy but not soupy. Remove from heat.
    6. Prep the lettuce cups: Carefully separate the lettuce leaves, keeping them whole and cup-shaped. Rinse and pat dry. Butter lettuce gives the most elegant, pliable cups; iceberg is crunchier and holds up better if making ahead.
    7. Assemble and serve: Spoon the warm tofu filling generously into each lettuce cup. Top with toasted sesame seeds, spring onion greens, and an extra drizzle of sriracha or chili oil. Serve immediately with lime wedges on the side — a squeeze of lime over the top brightens everything.
