    1. Cook the Noodles: Cook the udon noodles according to package instructions, then drain.
    2. Sear the Tofu: Heat 1 tablespoon oil in a wok and pan-fry the tofu until golden. Remove and set aside.
    3. Stir-Fry the Vegetables: Add the remaining oil and stir-fry the vegetables and garlic for 4-5 minutes.
    4. Add the Noodles & Sauce: Add the noodles, soy sauce, vegan oyster sauce, and sesame oil, tossing to combine.
    5. Return the Tofu: Return the tofu to the wok and toss well.
    6. Serve: Serve immediately.
