Lemon Bars (Vegan)

Keep the butter cold and work quickly when making the crust — cold butter cubes are what create a short, tender shortbread base instead of a tough one.
Instructions:
- Preheat and Prep: Preheat the oven to 180°C (350°F). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Make the Crust: Mix together 200 g (1⅔ cups) flour, 60 g (½ cup) powdered sugar, and 1 g (¼ tsp) salt. Add the cold cubed 115 g (½ cup) vegan butter and rub into the flour until it resembles coarse breadcrumbs. Add 15 ml (1 tbsp) dairy-free milk and mix until the dough just comes together. Press evenly into the base of the prepared pan.
- Bake the Crust: Bake for 18–20 minutes until lightly golden. Set aside to cool slightly.
- Make the Lemon Filling: Whisk together 300 g (1½ cups) sugar, 60 g (½ cup) cornstarch, and a pinch of turmeric. Gradually whisk in 480 ml (2 cups) dairy-free milk, then add 240 ml (1 cup) fresh lemon juice and 2 tbsp lemon zest. Cook over medium heat, whisking constantly, for 8–10 minutes until the mixture thickens to a pudding-like consistency.
- Assemble: Pour the hot lemon filling over the warm crust and spread evenly.
- Cool and Set: Allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until fully set.
- Serve: Lift the bars out using the parchment overhang. Dust with powdered sugar and slice into 16 squares. Serve chilled.
Common Mistakes: Not whisking constantly — the filling will become lumpy if left unattended, so keep whisking the entire time it's on the heat. Cutting before fully chilled — the filling needs at least 2 hours in the refrigerator to set properly; cutting too early results in a runny filling. Using bottled lemon juice — fresh lemon juice is essential for the best flavour, as bottled juice produces a flat, artificial taste.
