Pat the cut vegetables completely dry after prepping — any surface moisture steams them in the oven instead of letting them caramelize and brown.
Instructions:
- Preheat the oven: Preheat to 425°F (220°C). Position a rack in the center and line a large rimmed baking sheet (or two) with parchment paper.
- Prep the vegetables: Peel and cut all root vegetables into roughly equal 1-inch pieces so they roast evenly. Pat them dry with paper towels — this step is key for caramelization instead of steaming.
- Season generously: Toss all the vegetables, garlic cloves, thyme, and rosemary in a large bowl with olive oil, salt, and pepper. Make sure every piece is well coated.
- Spread in a single layer: Arrange the vegetables on the prepared baking sheet(s) in a single layer with a little space between pieces. Overcrowding will cause them to steam rather than roast — use two pans if needed.
- Roast: Roast for 20 minutes, then flip the vegetables with a spatula. Return to the oven and roast for another 15–20 minutes, until deeply golden and caramelized at the edges, and fork-tender throughout.
- Finish and serve: Remove from the oven. If using balsamic vinegar, drizzle it over the hot vegetables and toss gently. Squeeze the roasted garlic out of its skins, scatter with fresh parsley, and serve immediately.
Storage: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in a 400°F oven for 8-10 minutes to restore crispness, or use in grain bowls, wraps, or soups.
Prep in Advance: Vegetables can be peeled, cut, and tossed with oil and seasonings up to 24 hours in advance. Store covered in the fridge and roast straight from cold — you may need 5 extra minutes.
Variations: Slice a fennel bulb into wedges and roast alongside for a subtle anise note. Add a drizzle of honey or maple syrup in the last 5 minutes of roasting for a sweeter version. Add ½ tsp smoked paprika or a pinch of cayenne to the seasoning mix for a spicy version. Toss in some kale or Swiss chard for the last 5 minutes of roasting to add greens.
Swaps: No parsnips? Use more carrots or celery root (celeriac). No beets? Butternut squash or delicata squash work beautifully. No fresh herbs? Use dried (reduce amounts by two-thirds) or swap in za'atar or Italian seasoning. Oil-free? Toss with vegetable broth instead and expect a slightly less caramelized result.
Common Mistakes: Overcrowding the pan is the #1 mistake — use two pans before you pile vegetables on one. Skipping the drying step means wet vegetables steam instead of roast; always pat dry. Cutting pieces unevenly means smaller pieces burn while larger ones stay underdone — keep sizes consistent.
A few ingredients do most of the work in this recipe. The carrots adds natural sweetness and color. The sweet potato adds heartiness and a creamy texture once cooked. The red onion adds sweetness and depth as it cooks down. The garlic builds a savory, aromatic base.
