    2. Wilt the spinach: Add the fresh spinach to the pan and stir for 1–2 minutes over medium heat until just wilted. If using frozen spinach, skip this step — just make sure it’s fully thawed and squeezed completely dry.
    3. Blend the cashew base: Drain the soaked cashews and add to a blender with water, lemon juice, apple cider vinegar, onion powder, nutritional yeast (if using), salt, and pepper. Blend on high for 60–90 seconds until completely smooth and creamy.
    4. Combine: Add the sautéed onion, garlic, and wilted spinach to the blender. Pulse 4–6 times — you want to incorporate the spinach but keep some texture, not blend it smooth.
    5. Warm and serve: Transfer to the skillet and warm gently over low heat for 2–3 minutes, stirring, until heated through. Taste and adjust seasoning. Serve warm with tortilla chips, pita, or crusty bread.
