Strawberry Fruit Leather

Instructions:
- Preheat Up and Prep the Pan: First, crank up your oven to 170°F (77°C), or as low as it can go. Line a baking sheet with parchment paper or a silicone mat.
- Blend It Up: Toss the strawberries, maple syrup, and lemon juice into a blender or food processor. Blend everything until it's super smooth.
- Spread It Out: Pour the strawberry puree onto your prepared baking sheet. Use a spatula to spread it out evenly, about 1/8 inch thick. Try to make it as uniform as possible so it dries evenly.
- Bake It: Pop the baking sheet in the oven and let it bake for 3 to 4 hours. You want the fruit leather to be dry to the touch but still a bit flexible. Check it out after three hours to make sure it doesn’t over-dry.
- Cool and Cut: When it’s done, take it out of the oven and let it cool completely. Carefully peel the fruit leather off the parchment paper, then cut it into strips or whatever shapes you like using scissors or a knife.
- Roll and Store: Roll your strips in parchment paper to keep them from sticking together, then stash them in an airtight container. They’re good at room temperature for about a week, or you can keep them in the fridge for a bit longer.
Tips:
- Feel free to tweak the sweetness to your taste, especially if your strawberries are super sweet or a little tart.
- If you’re using a dehydrator, set it to 135°F (57°C) and let it dry for 6 to 8 hours.
Notes:
The fruit leather is done when it’s no longer sticky to the touch in the center. The edges may dry faster — test the middle of the pan.
Spread the puree in an even, thin layer — aim for about 3mm / ⅛ inch thickness. Thick spots won’t dry properly and remain sticky; thin spots become brittle.
Tips:
Use a silicone baking mat instead of parchment — the leather peels off much more cleanly.
The oven door can be left slightly ajar to allow moisture to escape and speed up drying.
Storage:
Roll the leather in parchment and store at room temperature in an airtight container for up to 2 weeks, or refrigerate for up to 1 month.
Swaps:
Strawberries can be swapped for any soft fruit: mango, peach, raspberry, or mixed berry.
