Ingredients:

πŸ₯– 4 pieces french or sourdough bread

🍌 1 banana, ripe (optional)

🌽 2 tbsp corn starch

πŸ§‚ 1 tsp cinnamon powder

🌼 1 tsp vanilla extract

🍁 1 tbsp maple syrup

πŸ₯› 1 cup almond or oat milk

🧈 1-3 tbsp butter

When you have time in the morning, you treat yourself to these.

Step 1:

Mash a banana in a shallow bowl, then add cornstarch, cinnamon, vanilla, and maple syrup.

Slowly add the almond or oat milk and whisk until there are no clumps.

‍

Step 3:

Dip each bread slice in the batter until well coated. You can dust one side with a bit more cinnamon.

Step 4:

You can cook on the STOVE: melt some vegan butter in a nonstick pan and cook each bread on both sides for a few minutes until golden. You can bake in the OVEN: line a baking sheet with parchment paper and arrange the bread slices side by side (as many as you can fit). Melt vegan butter and brush on, then bake slices at 400F for about 30 minutes until golden.

Step 5:

Serve with vegan butter, nut butter, fresh fruit, and maple syrup! It will keep in a sealed container for 2-3 days in the refrigerator.
