Slice the seitan or tofu thin before marinating — thinner pieces pick up more of the lemon and oregano marinade and crisp up better at the edges when seared.

    Instructions:

    1. Marinate: In a bowl, toss the seitan or tofu slices with olive oil, lemon juice, oregano, garlic powder, cumin, smoked paprika, salt, and pepper.
    2. Sear: Heat a large skillet over medium-high heat and cook the marinated slices for 3-4 minutes per side, until browned and slightly crisp at the edges.
    3. Warm the Pita: Warm the pita breads in a dry skillet or oven.
    4. Fill: Fill each pita with the cooked seitan, lettuce, tomato, and red onion.
    5. Drizzle: Drizzle generously with vegan tzatziki sauce.
    6. Serve: Fold or wrap and serve immediately.
Common Mistakes, Notes, Storage, Swaps & Tips

Notes: Press the tofu firmly before using — excess moisture keeps it from browning or absorbing marinade properly.

Tips: Taste as you go and adjust seasoning to your preference before serving.

Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days.

Swaps: Extra-firm tofu can be swapped for firm tofu (press longer) or tempeh for a firmer, nuttier bite.

    Why these Ingredients

A few ingredients do most of the work in this recipe. The seitan or extra-firm tofu provides protein and soaks up the surrounding flavors. The olive oil brings fruity depth and helps carry the other flavors. The lemon juice adds acidity that brightens and balances the dish. The dried oregano adds an earthy, aromatic herbal backbone.
