Ingredients:
- 14 oz seitan or extra-firm tofu, thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika
- Salt and pepper, to taste
- 4 pita breads
- 1 cup shredded lettuce
- 1 tomato, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup vegan tzatziki or cashew yogurt sauce

Slice the seitan or tofu thin before marinating — thinner pieces pick up more of the lemon and oregano marinade and crisp up better at the edges when seared.
Instructions:
- Marinate: In a bowl, toss the seitan or tofu slices with olive oil, lemon juice, oregano, garlic powder, cumin, smoked paprika, salt, and pepper.
- Sear: Heat a large skillet over medium-high heat and cook the marinated slices for 3-4 minutes per side, until browned and slightly crisp at the edges.
- Warm the Pita: Warm the pita breads in a dry skillet or oven.
- Fill: Fill each pita with the cooked seitan, lettuce, tomato, and red onion.
- Drizzle: Drizzle generously with vegan tzatziki sauce.
