- 1 slice bread of choice (sourdough, whole grain, or rye)
- ½ large ripe avocado, sliced
- 1 small tomato or 1 thick slice tomato
- 16 g (2 tbsp) everything bagel seasoning

Instructions:
- Toast the Bread
Toast 1 slice bread of choice until golden and crisp. - Add the Avocado
Slice or fan out ½ large avocado and lay across the toast. Gently press so it adheres. - Add the Tomato
Place 1 small tomato or 1 slice tomato on top of the avocado. - Season and Serve
Sprinkle generously with 16 g (2 tbsp) everything bagel seasoning. Serve immediately.
Ripe avocado is the star — when perfectly ripe it fans out into silky, buttery slices with a rich, nutty flavor. Ripeness is everything: an underripe avocado is waxy and tasteless; an overripe one is stringy and brown. Press the skin gently — it should give slightly but not feel mushy.
Crusty bread provides structure. A firm, well-toasted slice holds the avocado without becoming soggy. Sourdough is the classic choice for its tangy flavor that complements the richness of the avocado. Whole grain adds fiber and a nuttier flavor.

Bread Choice: Any crusty bread works — sourdough, whole grain, or rye. For gluten-free, use gluten-free toast or rice cakes.
Common Mistakes: Don’t use underripe avocado — the flesh won’t fan out smoothly and will lack flavor. Don’t under-toast the bread — a firm, golden toast holds up to the avocado without getting soggy.
Seasoning Swap: No everything bagel seasoning? Use flaky sea salt + red chili flakes + a drizzle of olive oil, or za’atar for a Middle Eastern twist.
Storage: Best assembled and eaten immediately. If making ahead, press plastic wrap directly onto the avocado surface to slow browning.
