Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 3 tbsp olive oil, divided
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • 1 clove garlic, minced
  • 1/4 cup dried cranberries (optional)
  • 2 tbsp toasted chopped walnuts or pecans (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss the halved Brussels sprouts with 2 tablespoons olive oil, salt, and pepper, then spread cut-side down on the baking sheet.
  3. Roast for 20-25 minutes, until deeply browned and crispy at the edges, flipping halfway if needed.
  4. Meanwhile, whisk together the balsamic vinegar, maple syrup, garlic, and remaining tablespoon of olive oil in a small bowl.
  5. Once the sprouts are done roasting, transfer them to a large bowl and toss with the balsamic glaze while still hot.
  6. Fold in dried cranberries and toasted walnuts, if using.
  7. Serve warm.
