Ingredients:

🌶️ 2 (3 tbsp) (30 g/45 ml) chipotle peppers in adobo sauce

🍯 2 1/2 tbsp (38 g) vegan honey or honey (if not vegan)

🍇 1/4 cup (60 ml) red wine vinegar

🧂 salt to your taste

💦 4 tbsp (60 ml) water

🛢️ 1/2 cup (120 ml) neutral-flavored oil (like avocado oil)

🌿 1/4 tsp (0.25 g) dried oregano

🧂 1/2 tsp (1 g) ground black pepper

Instructions:

  1. Blend the Base: Put the red wine vinegar, honey, chipotle peppers with a bit of adobo sauce, salt, and water into a blender.
  2. Smooth It Out: Blend on high for about 20 seconds until everything is completely smooth.
  3. Add the Oil: With the blender still running, slowly pour in the oil so the mixture thickens and turns creamy.
  4. Mix in the Herbs: Add the black pepper and oregano, then pulse a few times to mix them in.
  5. Taste and Adjust: Try the dressing and adjust the flavor as needed. Add more salt, honey, vinegar, or chipotle until it tastes just right.

Storage: Pour into a container and pop it in the fridge. Good for up to 5 days.

You can substitute honey with an equal amount of maple syrup.
