Blueberry Chia Drink

Ingredients:
- 200 g (1½ cups) fresh or frozen blueberries
- 3 tbsp chia seeds
- 500 ml (2 cups) water or coconut water
- 1 tbsp maple syrup or agave (adjust to taste)
- 1 tbsp fresh lemon juice
- ½ tsp vanilla extract
- 1 pinch of salt
- Ice cubes, to serve
- Fresh mint or extra blueberries, to garnish (optional)

Measure the chia seeds ahead — having them ready to add right after blending means less time for the blueberry mixture to sit before hydration starts.
Chill the water or coconut water — starting cold makes the finished drink taste more refreshing without needing extra ice.
Instructions:
- Blend the blueberries
Add the blueberries, lemon juice, maple syrup, vanilla extract, and a pinch of salt to a blender. Add 200 ml of the water or coconut water. Blend on high for 30–60 seconds until completely smooth and deeply purple. Taste and adjust sweetness — frozen blueberries will be less sweet than fresh, so you may want a touch more maple syrup. - Strain (optional)
For a smoother drink, pour the blueberry mixture through a fine mesh sieve, pressing the pulp with the back of a spoon to extract all the liquid. Skip this step if you prefer a thicker, more textured drink with extra fibre. - Combine with chia seeds
Pour the blueberry mixture into a large jar or jug. Add the remaining 300 ml of water or coconut water and stir to combine. Add the chia seeds and stir vigorously for 30 seconds to distribute them evenly — chia seeds clump together quickly, so make sure they’re well dispersed before the gel forms. - Rest and hydrate
Let the drink sit for at least 15–20 minutes at room temperature, stirring once or twice, until the chia seeds have swelled and the drink has a slightly thick, bubble-tea-like consistency. For best results, refrigerate for 1–2 hours or overnight — the longer it sits, the more the chia seeds bloom and the flavours deepen. - Serve
Stir well before serving as the chia seeds may settle. Pour over a glass full of ice. Garnish with fresh mint, a few whole blueberries, or a slice of lemon. Serve immediately or keep chilled.
Notes: Stirring the chia seeds immediately and vigorously after adding them is key — if you let them sit without stirring first, they clump into a solid mass and never hydrate evenly. Give them a good stir, then stir again after 5 minutes to break up any clusters before the gel fully sets. Coconut water adds a natural sweetness and electrolytes that make this drink extra refreshing.
Storage: Keep in a sealed jar in the fridge for up to 3 days. The drink thickens further as it sits — thin with a splash of water or coconut water and stir before serving. Shake or stir well as the chia seeds will settle to the bottom.
Variations: Replace blueberries with frozen mango and use lime juice instead of lemon for a mango chia version. Use fresh strawberries and increase lemon juice slightly for a bright, summery strawberry lemon version. Skip the blueberries and whisk 1 tsp matcha powder into the base liquid for a matcha chia version. Replace half the water with sparkling water, added just before serving, for a sparkling version. Assemble the night before and let the chia seeds bloom overnight for a perfectly thick morning drink.
