Cubano Sandwich (Vegan)
Ingredients:
- 1 baguette or Cuban-style bread, cut into 4 sandwich lengths
- 14 oz seitan, thinly sliced
- 1 cup vegan ham-style deli slices
- 1 cup vegan Swiss-style cheese shreds
- 1/2 cup dill pickle slices
- 1/4 cup yellow mustard
- 3 tbsp vegan butter, softened

Press firmly while it cooks — a Cubano is meant to come out flattened and compact, with a crisp, buttery crust; a light touch won't get you there.
Instructions:
- Spread the Mustard: Split each piece of bread and spread mustard on one side.
- Layer: Layer seitan, vegan ham, pickles, and vegan cheese onto each sandwich.
- Butter the Outside: Close the sandwiches and spread vegan butter on the outside of the bread.
- Press & Cook: Heat a panini press or skillet over medium heat and press each sandwich for 4-5 minutes per side, until golden, crisp, and the cheese is melted.
- Slice & Serve: Slice diagonally and serve hot.
