    4. Blanch the Bok Choy: Blanch the bok choy in the noodle water for 1-2 minutes, then drain along with the noodles.
    5. Combine: Add the noodles and bok choy to the bowls, tossing to coat in the sauce.
    6. Top & Serve: Top with the cooked vegan meat, green onions, and crushed peanuts.
