Cut the tofu (or seitan) and vegetables into similarly sized pieces before marinating — even sizing keeps everything cooking at the same rate on the grill. If using wooden skewers, soak them in water for 20-30 minutes first so they don't scorch.
Instructions:
- Make the Marinade: Whisk together the olive oil, soy sauce, lemon juice, smoked paprika, and garlic powder.
- Marinate: Toss the tofu or seitan and vegetables in the marinade and let sit for 15-20 minutes.
- Skewer: Thread the marinated tofu and vegetables onto skewers, alternating pieces.
- Grill: Grill over medium-high heat for 10-12 minutes, turning occasionally, until charred and cooked through.
- Serve: Serve hot, drizzled with any remaining marinade.
Notes: Press the tofu firmly before using — excess moisture keeps it from browning or absorbing marinade properly.
Tips: Don't move the skewers too often on the grill — let each side develop char marks before turning.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
Swaps: Extra-firm tofu can be swapped for firm tofu (press longer) or tempeh for a firmer, nuttier bite. No grill? A grill pan or broiler works well as a substitute; just watch cook times closely.
A few ingredients do most of the work in this recipe. The extra-firm tofu or seitan provides protein and soaks up the surrounding flavors. The red bell pepper adds sweetness and a pop of color. The zucchini adds moisture and a mild vegetal note. The red onion adds sweetness and depth as it cooks down.
