Pat the onion rings thoroughly dry after slicing — any surface moisture keeps the flour coating from sticking evenly, leading to patchy spots that fall off during frying.
Instructions:
- Prep the onions: Slice onions into ½-inch rings and separate into individual rings. Pat dry with paper towels. Discard the very small inner rings or save for another use.
