🍅 3 cups tomatoes

🛢️ 1 tbsp olive oil

🧅 1 small onion, chopped

🧄 2 garlic cloves, minced

🌿 ½ tbsp dried basil or 1 tbsp chopped fresh basil

🍩 ½ tbsp brown sugar

Tomatoes lower the risk of heart disease and cancer and have abundant vitamin C, potassium, folate, and vitamin K.

Step 1:

1- Saute onions with the oil and garlic. Meanwhile roast the tomatoes in the oven at 380F for 30 minutes (you can also roast the onions and garlic in the oven with the tomatoes).

Step 2:

2- Blend the onions, garlic, tomatoes, and basil until creamy and add to a medium pot. In the same blender, blend the raw cashews with ½ cup of water and add to the pot.

Step 3:

Simmer for a few minutes and adjust the salt and pepper to your taste.

Serve with your favorite bread, croutons!
