Instructions:
- Freeze the watermelon
Cut watermelon into cubes and freeze for at least 2 hours, or overnight. This is what gives the cooler its thick, slushy texture without watering it down. - Blend
Add the frozen watermelon, lime juice, cold water, and salt to a blender. Add maple syrup or agave if using. Blend on high for 30–60 seconds until completely smooth. - Taste, adjust, and serve
Taste and adjust — more lime for brightness, more maple syrup if the watermelon isn’t very sweet, more water to thin. Pour into glasses and serve immediately.
Notes:
Frozen watermelon gives a thick, slushy texture without needing extra ice, which would dilute the flavor. If using fresh watermelon instead of frozen, add 1 cup of ice.
Storage:
Best consumed immediately. Pour leftovers into a freezer-safe container and freeze for up to 1 day — re-blend briefly before serving.
Swaps:
Sparkling water gives a light fizzy lift and works great as a mocktail. Lime can be swapped for lemon. Add a handful of fresh mint to the blender for a watermelon mojito vibe.
Tips:
A chili-lime rim takes this to the next level. For a crowd, blend in batches and serve from a pitcher over ice.
